Got a little done this morning. I started the center piece that will overlap the door with a bunch of tack welds to keep it cool. Then I ran beads in between the tacks. Is it safe to fill in over that with a solid bead now or will that warp it. The bottom pic has the beginning and the end of about a 3 inch bead, between two tack welds at top and bottom edges of the picture. I'd like to fill it in and smooth it out a little bit.

A friend lost a persimmon tree in the storm last night. Anyone tried persimmon wood before?

Have not tried it, but bbq forums will tell you its a great wood. Its a sister tree to hickory. The btu ability of persimmon is right with hickory. Super strong wood and gets hot.

Yeah, I've read online it's good. But not much to be found on it. Makes me wonder if it's really not all that good or why isn't it talked about that much.

I have smoked with persimmon before and it is very good. It is very hard and will smoke for a long time. If you get some make sure it is dry before you try to use it.

I'm renting a splitter... $45 for 2 days if I get it on Tuesdays since they are closed Wednesday.

You ever cook with persimmon? I've never, but am curious about it.

I see a log splitter beside the wood pile in your pic.

I've never used persimmon. I recently got persimmon and peach. Never tried either one. I'll have to let them both dry. I mostly use hickory and maple, some pecan, very little oak. Apple is hard to come by.

Bahahaha the wood will rot if I rely on that splitter!!!

I have been cooking exclusively with white oak and apple. My dad got me about half a truck bed of Apple and I bought a face cord of white oak from a fellow here. My dad also brought me a feed bag of cherry chunks. I feed him BBQ when he is down and he brings me wood I can't get here lol.

I seen on that pit masters show that used to be on, Myron Mixon was using green peach wood and winning a lot of money with it too. Don't know if it was for show, but they showed him going to cut it right before a competition.

7mm-08, I don't know if you have ever had tri tip, but it is quickly becoming a favorite of mine and the fam. A buddy cooked one up for me on a trip to Cali. All I use is salt and pepper, only cooks for about 1-1.5 hour, until 150 internal. Really good for those days you can't spend all day on a big piece.

I have a ten foot long stainless heavy gauge trough that is 36" wide and 14" deep. I plasma cut the tank in half for a top and bottom. Have another 1/4" stainless steel tank that I cut down to size with plasma for the offset fire box. I wanted to build one big enough to hold a whole hog. Just gotta weld it up when it's not too hot. May mount on a trailer frame also for mobility.
