Gonna try a couple fatty rolls here In a bit. It will be something new for me but it sounds pretty straight forward. I'll post a few pics as the day progresses.

I have some deer hams on my grill with some whiskey barrel wood on the side...
Low heat lot of smoke.
Over at smokingmeatforums.com there's a zillion fattie threads. I've never smoked one but the one thought that keeps running through my brain cell is "When you smoke those fatties do you have any trouble keeping them lit?"
