I haven't tried to eat them yet, but I've got a swan gizzard and liver in freezer. I figure if regular gizzards are good (and they ARE good) then a gizzard as big as a softball has got to be great!

I'm gonna try the buttermilk and I'll let ya'll know how it turns out.

joe's bbq in whiteville has fried gizzards sometimes and they are some of the most tender gizzards I ever ate.

They sell em at Stephenson's BBQ on Hwy 50. I get em every time I go in there, along with a plate of pulled pig, new potatoes, green beans and some sweet tea.

Also add the whole back strip...not much meat but tender and juicy none the less...great with the neck, heart, gizzard and liver...yum yum.....

I don't care for the heart or liver...but love the neck, back and gizzards.
