Old Mossy Horns
Trim the fat, marinade hunk of bear meat in Moore's Marinade overnight, throw on grill, once it's flipped, sprinkle Tony Chacheres Creole Seasoning on it. Unlike venison, make sure it's cooked throughout.
This recipe is my favorite on about any critter!

Never been a fan of bear meat until a couple weekends ago when a buddy made bear stew. Took a large chunk from the ham cleaned of exterior fat and silver skin, seasoned w/ S&P and lightly browned it in frying pan with a bit of oil, put in crock pot on low w/ can of cream of mushroom soup and a small bit of red wine. After 4+/- hours add potato chunks, baby carrots and a rough chopped onion & cooked for another 3-4 hours (you can also add baby portabella tops if you want.

Granted a hockey puck properly seasoned and slow cooked is edible but this stew was amazing.

Also, don't laugh... I grind all of mine, mix with pork, and make it all into sage breakfast sausage. Bear sausage is AWESOME! I guess the greasiness of the meat makes it so good...
